I began baking mud pies in my backyard when I was just 5 years old. I used to stay there for hours, creating new mud desserts. This creating outdoors went on for the next four years. One day, when I was just nine years old, my mother finally allowed me to bake by myself in the real kitchen. The first thing I learned to make was cornbread. I was having so much fun learning about cooking from my mother and using my father as my official taste tester that I knew I had found my life calling. The kitchen was really the place that our whole family connected and I have passed this love of baking on to my children. You are never too young to start creating in the kitchen. Mini Ice-cream Sandwiches

You will need:

1 Bag of your favorite flavor of Beth's Heavenly Cookies

1 Pint of your favorite flavor of ice-cream 

Rainbow sprinkles

Make sure you wash your hands before you begin any kitchen creations.

Stir ice-cream in bowl to get ice-cream a little soft so that it is easier to work with. Place one cookie on a cookie sheet. Spoon a scoop of ice-cream onto the cookie. Remember, the thicker you make it, the messier it will be to eat. Place second cookie on top of the ice-cream. You now have your ice-cream sandwich. Repeat this process with the next 3 sets of cookies. When you have finished, place rainbow sprinkles on a large plate. Roll each ice-cream sandwich, just as a wheel would roll, through the sprinkles. When you are done with this step, place ice-cream sandwiches on a plate and place in your freezer so that the ice-cream can firm up. This is the perfect dessert. This recipe makes 4 servings. You may want to double the recipe. No one will be able to eat just one!
